Adds structured SMTP transaction logs for connection, MAIL, RCPT, queued DATA, and disconnect events so production logs show peer, sender, recipient, status/code, queue id, bytes, and delivery linkage.

Validation:

• jerboa_verify lib/jerboa-smtp/server.ss
• make binary
• sh tests/functional-smtp-test.sh
• FreeBSD gmake binary on dns2.linbsd.org
• deployed FreeBSD binary to jsmtp jail and restarted service
• live SMTP smoke test to lla@mauthesis.com queued and delivered with structured jsmtp.log entries
